Blueberry Muffins

Blueberries.  Ah, sweet blueberries.  Such luscious little fruit that I have to battle the birds in order to harvest.

I have five little blueberry bushes in my backyard.  Every year the birds seem to get my sweet little berries before I do.  It ends up that I have to go to an orchard(?) and pay to pick by the bucketful.  It’s o.k.  One day I will beat the birds at their own game.  I just know it.I like to pick one or two buckets.  I then take them home, rinse them off, dry them and then lay them out on a cookie sheet on a single layer and place in the freezer. Once frozen, I place them in a freezer bag and they are good to go when I want them.  My son enjoys eating them frozen.

I found an incredible recipe on Pinterest.  (Where else, right?)  The title of the article is The Best Ever Blueberry Muffins.  It ends up that they really are fabulous.

A large cookie scoop makes portioning easy.

Doesn’t it look good?  It still had to go in the oven.

One thing that I did wrong was that I failed to read the recipe through entirely.  [Long story - short....I am in the process of trying to get rid of a printer.  I am trying to finish off the black toner but it just won't die.  Initially I printed out only one page of this recipe.  It printed out large.  When I went back to reprint it in its entirety, it printed out very small.  I was using both copies when I made these and somewhere/somehow missed the part about swirling the cooked blueberry mixture.  They were still good, nonetheless.]

Moral of the story, don’t be afraid to try.  Sometimes things will still work out even if mistakes are made along the way.  (Ever hear of the story of how the Post-It Note came to being?)
